Rock Melon Splash

Ingredients:

-          Half a rock melon (cut in to small cubes)

-          1 cup pear jam

-          ½ cup rosewater

-          2 Cups water

-          2 raspberries (for decoration)

-          1 scoop vanilla ice-cream

 

Method:

  1. Combine water, pear jam and rock melons .
  2. Blend until processed.
  3. Add rosewater and blend.
  4. Pour the rock melon mixture into a glass and chill in the fridge.
  5. Add a scoop of vanilla ice-cream to the rock melon juice.
  6. Garnish with raspberries.

Tomato Chutney

Tomato Chutney

Ingredients:

-8 medium sized tomatoes

-4 medium sized onions

-4 teaspoons crushed garlic

-4 teaspoons crushed ginger

-2 teaspoons crushed chilli

-2 tablespoons sugar

-¼ cup oil

-¼ chopped coriander

Directions:

1. Cut tomatoes and onions length wise into thin slices.

2. Fry garlic, ginger and chillies in oil until lightly browned.

3. Add onions to this and fry until onions have softened and are lightly browned.

4. Add the tomatoes and sugar.

5. Cook until the tomatoes soften and there is no excess water.

6. Then puree the mixture with a blender and garnish with chopped coriander.

Ginger Pickle

 

Ingredients:

-Semi-Ripe Ginger

-Salt

-Water

-Lemon or Lime juice

Directions:

1. Cut ginger into small thin pieces.

2. Add enough water to soak the ginger completely.

3. For every cup of water add two tablespoons of salt.

4. Leave this mixture to marinate for 2 to 3 hours.

5. Once the ginger has marinated, drain all the water.

6. Then add enough lemon or lime juice to cover the ginger.

7. Leave in the fridge so the flavours become enhanced.

Note:  To prevent the ginger pickle turning reddish you can add some tumeric to the mixture but some might not like the tumeric taste.

Banana Cake with Ice-cream

 

Banana Cake with Ice-cream

 

Ingredients

-1 small banana

-½ cup crushed canned pineapples

-2 medium sized eggs

-1 cup sugar

-150 grams butter (melted)

-½ cup walnuts

-2 cups self-raising flour

-Mango Pulp

-Strawberry Jam

-Ice Cream

Banana Cake

1. Add sugar, melted butter and eggs in a bowl and beat until all the ingredients are combined and the mixture is creamy.

2. Add the banana and pineapples to the mixture and blend until they are combined.

3. Add flour and mix in with a spoon.

4. Add walnuts to the mixture.

5. The mixture is ready. Pour the cake mixture into a baking tray and bake on 180 degrees Celsius for 20 minutes or until the mixture is cooked thoroughly.

Preparation

1. Once the cake is cooled, cut into small squares.

2. Place your favourite flavoured Ice Cream on or next to the cake square.

3. Pour mango pulp and strawberry jam on the Ice Cream and Cake.

Puff Pastry Cinnamon Rolls

Puff Pastry Cinnamon Rolls

Cinnamon rolls with mint tea

Ingredients:

4 Sheets of puff pastry

8 Tablespoons ground cinnamon

8 Tablespoons brown sugar

 

Procedure: 

-Sprinkle 2 tablespoons of sugar and 2 tablespoons of cinnamon evenly on each sheet of pastry covering the whole pastry sheet.

-Roll the pastry from one end to the other making sure the ends are pressed together.  Cut the rolled pastry into 2cm rolls.

-Bake in the oven for 15 minutes on 180°C or until the pastry has slightly browned.

-Remove cinnamon rolls from baking tray immediately.

-Serve warm or cold depending on taste.
